Vanilla Tablet (Scottish not fudge)

1 lb sugar
1 tablespoon golden syrup
1 teaspoon vanilla
1 cup milk
2 tablespoons butter
Combine all but the vanilla in saucepan. Heat slowly to a boil and boil to soft ball stage (about 25 minutes). Remove from heat, add vanilla. Beat until creamy (critical step to crystalize) then immediately put in greased tin.
This crystalline, melt-in-the-mouth treat is worth a once a year splurge.
