Whipped shortbread -Cara Joy Hughes
1/2 lb soft butter
1/2 c icing sugar
11/2 c flour
1/2 - 3/4 vanilla
1/4 c cornstarch
* recipe may be doubled
Beat butter and sugar well and add the rest gradually. Drop onto cookie sheet. Bake 350 for 15 minutes. This is Cara Joy's mum's recipe and the secret when you take out the shortbread from the oven, is to cool it on a brown paper bag which will absorb any excess fat from the cookie.
