GRANOLA
Combine:
5 cups old-fashioned rolled oats (gluten-free oats are available if desired
1 cup hazelnuts (or almonds or pecans)
1 cup sunflower seeds
3/4 cup sesame seeds
1 cup ribbon coconut
1 cup soy flour
1 cup non-instant skim milk powder
Combine:
1 cup honey
1 cup vegetable oil
(heat honey gently in microwave first to ease the combining).
Combine all ingredients, spread on 2 baking sheets, and bake for 27-30 minutes at 300 F, stirring at 3 intervals, until golden brown. Must be stored in the refrigerator. A great cereal with fruit and milk or yogurt. A great snack.
For special breakfasts, make parfaits in champagne flutes...a spoon of plain yogurt at the bottom, granola, fruit of choice*, yogurt, raspberry coulis, repeat. A few kiwi slices placed to face the glass look appetizing, especially with red coulis.
This granola was hugely popular with our Bed and Breakfast guests. It's sweet, but nutritious too.
