Carrot Pudding.  -Yvonne Akerman

1 cup suet.
1 cup raw grated carrots.
1 cup raisins.
1 egg.
1 tsp salt.
1 tsp soda.
1tbsp vanilla.
1/2 cup flour
1/2 tsp each, cinnamon, cloves and nutmeg.
2 tbsps sour milk, or enough to make a drop batter
1 cup brown sugar.
1cup grated raw potato.
1 cup currants

Fill pan 2/3 full and steam for  2 hours.

Sauce for Carrot Pudding:

1/4 cup sugar.
1 cup boiling water.
1 tsp. Vanilla.
2 tbsps butter

Cook until thick and clear. This carrot pudding was a favourite of my mother's, she made it every year in place of the original plum pudding, a fav of our family for years.
