Whipped Shortbread
INGREDIENTS
1/2 lb soft butter
1/2 c icing sugar
1 1/2 c flour
1/2 - 3/4 vanilla
1/4 c cornstarch
* recipe may be doubled
DIRECTIONS
Beat butter and sugar well and add the rest gradually.
Drop onto cookie sheet.
Bake 350 for 15 minutes.
This is my mum's recipe and the secret is when you take out the shortbread from the oven, is to cool it on a brown paper bag which will absorb any excess fat from the cookie.
