Granola

"This granola was hugely popular with our Bed and Breakfast guests. It's sweet, but nutritious too."

Granola

INGREDIENTS

Combine:

  • 5 cups old-fashioned rolled oats (gluten-free oats are available if desired)

  • 1 cup hazelnuts (or almonds or pecans)

  • 1 cup sunflower seeds

  • 3/4 cup sesame seeds

  • 1 cup ribbon coconut

  • 1 cup soy flour

  • 1 cup non-instant skim milk powder

Combine:

  • 1 cup honey (heated gently in microwave first to ease combining)

  • 1 cup vegetable oil


DIRECTIONS

  1. Combine all ingredients

  2. Spread on 2 baking sheet

  3. Bake for 27-30 minutes at 300 F, stirring at 3 intervals until golden brown.


Must be stored in the refrigerator.


A great cereal with fruit and milk or yogurt. A great snack.


For special breakfasts, make parfaits in champagne flutes... a spoon of plain yogurt at the bottom, granola, fruit of choice*, yogurt, raspberry coulis, repeat. A few kiwi slices placed to face the glass look appetizing, especially with red coulis.
